Tomatoes, Peaches and Goat
Cheese
Makes: 6 servings
1/2 cup white balsamic
vinegar
1 clove garlic, minced
2 tablespoons brown sugar
2 tablespoons olive oil
1/8 teaspoon salt
1 large peach, peeled and
diced
2 tablespoons fresh basil,
chopped
2 pounds, tomatoes, sliced
3 ounces goat cheese,
crumbled
1/2 cup toasted pecans,
coarsely chopped
Freshly ground black pepper,
to taste
Cut tomatoes into roughly 1/2
inch thick slices.
Whisk together vinegar,
garlic, sugar, oil and salt. Stir in peach and basil.
Spoon mixture over tomato
slices. Top with cheese and pecans. Season with freshly
ground black pepper.
