Tuna Salad Supreme

Serves 2-3

 

1 6-8 oz tuna steak

5-6 black peppercorns

1 bay leaf

1 tablespoon lemon juice

2 tablespoons celery, minced

2 tablespoons onion

1 tablespoon parsley, minced

1/3 cup lite mayonnaise

1 teaspoon Dijon mustard

2 tablespoons sweet pickle relish

Salt & pepper to taste

 

Put water (about 1 inch), bay leaf, peppercorns and lemon juice in small skillet. Bring to a simmer over medium heat. Add the tuna, cover, and simmer for about 4 minutes. Remove tuna from water and cool.

 

Place tuna in a bowl and separate with a fork. Toss with celery, onion, and parsley. Add mayonnaise, mustard and pickle relish. Season with salt and pepper to taste.
