Turkey Sandwiches with Gorgonzola, Strawberries and Chive Mayonnaise

4 Sandwiches

 

¼ cup mayonnaise

1 tablespoon finely minced chives

½ teaspoon sugar

¼ teaspoon freshly ground pepper

8 slices sourdough bread

4 ounces Gorgonzola or other blue cheese, crumbled

4 – 6 large strawberries, thinly sliced

12 ounces sliced cooked turkey

 

In a small bowl, stir together mayonnaise, chives, sugar and pepper.

 

Even sprinkle 4 slices of bread with Gorgonzola cheese; arrange strawberries over cheese. Top each sandwich with one-fourth of the turkey.

 

Spread each of the 4 remaining bread slices with one-fourth of the chive mayonnaise; place over turkey. Cut sandwiches in half.

 

Note: Use turkey thigh meat if available. The richer flavor of the dark meat is delicious with the pungent blue cheese and sweet strawberries.
