Un-Boiled Eggs

 

 

[Frankly, the phrase boiled egg is a misnomer. Done properly eggs are removed from the heat when the water just reaches the boiling point.]

 

Prick the larger end of the egg with a pin. This allows air to escape and prevents cracking during cooking.

 

Place eggs in a deep saucepan in a single layer. Cover with water until roughly 1 inch over eggs.

 

Heat, uncovered, until water is just at a boil.

 

Remove from heat immediately and cover.

 

Let eggs stand for 12 – 15 minutes.

 

Place eggs in an ice water bath for 4 minutes to cool down.

 

Refrigerate.
