Wake-Up Breakfast Casserole

Serves 8 – 10

 

8 hash brown potato patties [or loose hash browns]

2 cups cheddar cheese, shredded

1 pound fully cooked ham, cubed

7 eggs, beaten

½ teaspoon salt

1 cup milk

½ teaspoon ground mustard

 

 

Preheat oven to 350 degrees F.

 

Spray a 9 x 13 glass baking dish with non-stick spray. Place hash brown patties in a single layer in baking dish. Sprinkle with cheese and ham. Beat eggs, salt, milk and mustard together. Pour over ham.

 

Cover with foil and bake for 1 hour.

 

Remove foil and bake for another 5 minutes or until knife inserted near center comes out clean.

 

Let stand for 5 minutes.

 

[May be prepared and refrigerated overnight before baking.]
