Serves 6-8
1 ½ cups mayonnaise
½ cup distilled white vinegar
1 cup sugar
½ teaspoon salt
1 cabbage (2 pounds), cored and shredded
1 large carrot, grated
1 medium green bell pepper, cored, seeded, and grated
1 rib celery, strings removed, grated
In a large bowl, whisk together the mayonnaise and vinegar until smooth. Add the sugar and salt; whisk until thoroughly blended. Add shredded vegetables. Mix well, cover, and refrigerate for at least 1 hour before serving. Adjust seasoning and serve.
