White Bean Chili

Weight Watcher Friendly…

 

Serves 4

 

2 teaspoons canola or corn oil

1 large onion, chopped

4 chicken thighs, boneless skinless, cut into bite-sized chunks

1 teaspoon ground cumin

2 cans (15 Oz.) great northern or cannelloni beans, drained and rinsed

1 cup reduced-sodium chicken broth

2 tablespoons cornmeal, blended with 2 tablespoons broth

 

 

Heat oil in a large nonstick skillet over medium-high heat. Add onion. Cook, stirring until soft about 8 minutes. Stir in chicken and cumin. Cook about 5 minutes more.

 

Stir in beans, broth and cornmeal mixture; stir while bringing to a low boil. Simmer about 10 minutes.

 

Ladle into bowls and serve hot.

 

Goes great with a small green salad…
