Wild Turkey Breast in Wine Sauce
Serves 4
2-3 pounds turkey breast, cut into strips
4 tablespoons flour
½ teaspoon onion salt
½ teaspoon pepper
2 teaspoons paprika
1 teaspoon sage
2 tablespoons extra virgin olive oil
½ cup dry white wine
8 oz. fresh mushrooms, sliced
1 bunch chives, chopped
Combine flour, salt, pepper, paprika and sage in a small paper or plastic bag. Add turkey breast strips and shake to coat.
Brown turkey strips in hot oil. Add wine, mushrooms and chives. Cover and simmer until tender, about 45 minutes.
